Quick recipe for this lovely Sunday evening! I saw a very similar recipe on a slow cooker page this morning and decided to give it a go. It’s incredibly warming and comforting, perfect for the cold evenings.
Potatoes-halved
Chorizo
Red onion
Mushrooms
Thyme
Cumin
Peri peri spice
Smoked paprika
Garlic
Garlic salt
Mature cheddar
Chop the potatoes into halves. I used Maris piper potatoes because Aldo were selling big bags for 19p!
Slice the onion, garlic and mushrooms and mix up the spices and herbs in a bowl. Thickly chop the chorizo and grill for a few minutes to caramelise slightly.
Heat the slow cooker and drizzle some oil into the bottom. Alternatively you could use foil in the crock but I like the burnt bits.
Layer potatoes, mushroom, onion spices and some butter and repeat until the ingredients are used up.
Don’t worry that it looks abit dry, it will get nice and juicy!
Layer lots of grated cheese on the top and heat through on high for 3 or low for 6. Make sure the potatoes are soft and serve with a large dollop of sour cream!
